I love anything that is related to olive trees, olives, olive oil! So it is a pleasure to present a very cool place recently opened in Ibiza which propagates the local olive tree varieties. The old school of San Lorenzo has been converted into a stylish Oleoteca and restaurant: rustic but chic in a Provencal style, crisp linen, beautiful lighting and a really impressive open kitchen behind a large glass panel. The concept behind Ses Escoles, Ibiza’s first Oleoteca is based on the taste of three varieties of wonderful local olives – Arbequina, Picual and Empeltre which make 100% Extra Virgin Olive Oil under the brand name of Can Michael Guasch, one of the principal olive oil producers on the island. It is a staple ingredient within the dishes and every table in the restaurant adorns the three olive oil bottles (light, medium and full bodied) for all to try. The menu itself is Mediterranean featuring traditional Ibizan dishes with a touch of refinement. The Oleoteca is open all year round and caters to the visitors and to the locals alike!
